*Ingredients:
+filling:
°8 ounces soft cream cheese
°1 tub (8 ounces) whipped cream
°1 large can (14-16 oz) mashed pineapple, drained
°confectioner's sugar cup
°Half a cup of pineapple chunks
°A cup of shredded coconut for garnish.
+Shell:
°1½ cups graham crackers
°Half a cup of sugar
°Half a cup of melted butter
*instructions:
For the crust: Mix the graham crackers with the sugar. Add the melted butter and stir until well combined. Press into an 8 x 8 or 9 x 9 inch skillet.
Filling: In a large bowl, whisk together the soft cheese and confectioners' sugar until very smooth.
Beat in a basin of whipped cream. Then add the drained pineapple.
Spread the filling over the crust. Cover with pineapple pieces and sprinkle with coconut.
Cool well - at least 4 hours, preferably overnight
