Ingredients:
4 apples, peeled, seeded, and sliced
60 ml (1/4 cup) butter
60 ml (1/4 cup) tightly packed brown sugar
4° Medium El Paso™ Flour Tortillas (6 in [15 cm])
° cooking spray
° Vanilla Ice Cream
60 ml (1/4 cup) caramel sauce; warmed up
Prepare:
1- Preheat the broiler to 230°C (450°F). Shower in a 20- or 23-cm (8 or 9-inch) baking dish with cooking spray (1.9 liters [2 quarts]).
2- In a 25 cm (10 inch) skillet, heat apples and ghee over medium heat for 5 to 7 minutes or until apples are crisp. Add the earthy colored sugar and cook until dissolved.
3- Place a quarter of an apple on each tortilla, then at that point, roll up. Place wrinkled side down in a baking dish. Spray the tops of the enchiladas with a cooking shower.
4- Heat 10 to 15 minutes or until golden brown.
5- Serve with frozen yogurt and topped with sprinkles of caramel sauce.
