Cranberry, orange and banana bread with vegan butter



*Ingredients:

°2 cups all-purpose flour
°1/2 cup almond flour
°1 teaspoon baking powder
°1 teaspoon baking soda
°1/2 teaspoon salt
°1/3 cup melted coconut oil
° 1/2 cup coconut sugar or brown sugar
°1/2 cup apple sauce
°1 tablespoon of flax flour
°1 t apple cider vinegar
°2 t pure vanilla extract
°2 cups mashed bananas, about 3 large ripe bananas
°1 cup cranberries, plus more for topping.

* Methods :

Heat oven 350 degrees F. Spray a 9 x 5 mold with nonstick cooking spray and set aside.
In a large bowl, whisk together flour, almond flour, baking powder, baking soda, and salt.
In a large mixing bowl, mix the coconut oil with the coconut sugar until light and fluffy. Combine in apple sauce, flax meal, apple cider vinegar, orange juice, zest, and vanilla. Then adding mashed bananas and mix to fully combined.
Add the dry ingredients to the wet ingredients and mix until completely combined, making sure not to over mix the mixture. Add ½ cup of the cranberries and mix slowly until blended.
Scoop the mixture into the prepared baking tray and spread it out into one even layer. Bake at 350 F for 55-65 minutes or until a toothpick inserted in center comes out clean. Remove from the oven and let cool on the baking tray for an hour before decorating the loaf. frost. Whisk together 1 stick of vegan butter, 1 cup of powdered sugar, and 1/3 cup of vegan condensed coconut milk until smooth and fluffy.
