Cranberry, orange and banana bread with vegan butter


°2 cups all-purpose flour
°1/2 cup almond flour
°1 teaspoon baking powder
°1 teaspoon baking soda
°1/2 teaspoon salt
°1/3 cup melted coconut oil
° 1/2 cup coconut sugar or brown sugar
°1/2 cup apple sauce
°1 tablespoon of flax flour
°1 t apple cider vinegar
°2 t pure vanilla extract
°2 cups mashed bananas, about 3 large ripe bananas
°1 cup cranberries, plus more for topping.

Add the dry ingredients to the wet ingredients and mix until completely combined, making sure not to over mix the mixture. Add ½ cup of the cranberries and mix slowly until blended.
Scoop the mixture into the prepared baking tray and spread it out into one even layer. Bake at 350 F for 55-65 minutes or until a toothpick inserted in center comes out clean. Remove from the oven and let cool on the baking tray for an hour before decorating the loaf. frost.
